One of the strategic plans of the Ministry of Maritime Affairs and Fisheries to increase the diversification of value-added fishery products is to utilize fishery products into ingredients that are beneficial for health. Snakehead fish is a product of freshwater fisheries that contains high albumin and has various health functions, including as an immunostimulant and anti-inflammatory. This research aims to determine the characteristics and potential of snakehead fish albumin extract as an immunostimulant and anti-inflammatory. Albumin extraction was carried out using the steaming method at 50°C for 6 hours. The analysis carried out included protein content, albumin content, amino acid profile, mineral content, and antioxidant activity. The results showed that snakehead fish extract had albumin levels of 36.15 mg/L, Fe mineral levels of 3.744 mg/L, Zn 1.553 mg/L, and Ca 50 mg/L. The amino acid profile shows that there are 15 amino acids consisting of 7 essential amino acids and 8 non-essential amino acids with the highest amino acid levels in glutamic acid, aspartic acid, lysine, leucine, arginine, and phenylalanine. The antioxidant activity of snakehead fish extract is classified as a moderate antioxidant with an IC50 amounting to 133.81 ppm. © 2025 Panjaitan et al.
