Abstract

Indonesian local rice has potential to be a functional food for obesity, especially on the type of germinated rice or commonly called Germinated Brown Rice (GBR) because GBR has various mechanisms for down blood cholesterol level and can reduce obesity. GBR Sintanur variety is the local rice variety of Indonesia, which is necessary to uncover the ability sent down obesity by analyzing the bioactive compound like gamma-aminobutyric acid (GABA) and dietary fiber. GABA analyzed by HPLC method and dietary fiber was analyzed with AOAC (1999) method in triplicate test and calculated for their average values. The result of GABA content in GBR Sintanur variety is 12.2 mg/ 100g relatively low when compared with another variety, and dietary food 9.1 g/100g higher than another variety. So GBR Sintanur variety having a lead in dietary fiber for potentiality reducing obesity. © 2019 Author(s).
